Eulises employs a meticulous approach to processing his Pink Bourbon coffee. After carefully handpicking the cherries, they undergo a 15-hour oxidation process before being de-pulped. The coffee is then placed in hermetically sealed tanks for a 36-hour fermentation period. Following this, the beans are gently dried on raised beds within a covered drying shed, benefiting from natural ventilation. This thoughtful processing results in a remarkably balanced cup of coffee, featuring a bright acidity and a remarkably pleasant, lingering aftertaste.
