This exceptional lot is a result of meticulous processing. After a 24-hour oxidation period post-harvest, the coffee undergoes a 36-hour fermentation after depulping. Drying on raised beds for approximately 15 days with optimal ventilation ensures the preservation of the coffee's inherent qualities. This washed coffee offers a harmonious blend that lingers on the palate, creating a truly delightful experience with a vibrant taste of orange marmalade, sweet caramel, and a rich nuttiness of almond butter.
Fabian Acevedo, a fourth-generation coffee producer, traces his inspiration back to his father, Álvaro Acevedo. Motivated by a passion for coffee, Álvaro encouraged Fabian to delve into the nuances of quality. Their journey began in 2006 with clean washed coffee, paving the way for continuous improvement. In 2013, they initiated changes in their fermentation practices, and the pursuit of excellence finally bore fruit in 2018, marking a significant leap in quality.
Fabian shares the challenges of navigating a changing climate, where growing healthy plants and managing fermentation demand constant adaptation. Providencia de Geshua, amidst its challenges, remains a testament to the family's resilience and commitment to producing exceptional coffee.
